Ingredients:
- 1 cup white chocolate chips
- 3 tablespoons unsalted butter
- 3 tablespoons heavy cream
- 1 teaspoon lemon extract
- Zest of 1 lemon
- 1 cup powdered sugar, plus more for coating
Instructions:
- In a medium microwave-safe bowl, combine the white chocolate chips, butter, and heavy cream.
- Microwave in 30-second intervals, stirring in between, until the mixture is fully melted and smooth.
- Stir in the lemon extract and lemon zest until well combined.
- Cover the bowl with plastic wrap and refrigerate for about 2 hours, or until the mixture is firm enough to handle.
- Once chilled, prepare a small bowl with powdered sugar for coating.
- Use a teaspoon or a melon baller to scoop out portions of the chilled lemon mixture, then roll them into balls.
- Roll the truffle balls in the powdered sugar until they are well coated.
- Place the coated truffles on a parchment-lined tray or plate.
- Refrigerate the truffles for an additional 30 minutes to set.
- Serve the truffles chilled, and store any leftovers in an airtight container in the refrigerator.
Tips:
- If the mixture is too soft to roll, chill it for a longer period until it’s firm enough.
