Ingredients List:

  • 1 box of White cake mix (and the ingredients listed on the box to prepare the cake)
  • 1 box (3 oz.) Raspberry-flavored gelatin
  • 2 cups Hot water
  • 1 jar (10 oz.) Raspberry preserves (preferably seedless)
  • 1 tub (8 oz.) Cool Whip
  • 1 bag (7 oz.) Shredded coconut

How to Make Raspberry Zinger Poke Cake:

1. Baking the Cake:

  • Follow the instructions on the cake mix box and bake the cake in a 9×13-inch baking pan.
  • Once baked, remove the cake from the oven and let it cool for about 30 minutes.

2. Poking the Cake:

  • With the handle end of a wooden spoon or a meat fork, poke holes into the cake at intervals of about an inch. Ensure you poke halfway into the cake. The goal is to have numerous holes for the gelatin to seep into.

3. Prepare the Gelatin:

  • In a separate bowl, mix the raspberry gelatin with 2 cups of hot water. Stir until the gelatin is completely dissolved.
  • Slowly pour the dissolved gelatin mixture over the cake, ensuring it fills the holes you poked earlier.

4. Add the Preserves:

  • In a microwave-safe bowl, heat the raspberry preserves for about 30 seconds or until they’re easy to spread.
  • Evenly spread the warmed preserves over the top of the cake.

5. Final Toppings:

  • Generously spread Cool Whip over the raspberry preserves layer.
  • Finish by sprinkling shredded coconut on top for added texture and flavor.
  • Refrigerate the cake for at least 4 hours to allow it to set properly.
