Cook the eggs
- Place the eggs in a 2-quart saucepan in a single layer and add cold water to cover them by 1 inch.
- Bring to a boil over high heat.
- Cover, remove the pan from the heat, and let stand for 12 minutes.
- Drain the hot water and transfer the eggs to a bowl of cold water for 10 minutes.
- Peel and dry the eggs.
Make the garlic-bread topping
- Melt the butter in a 10-inch skillet over medium-low heat.
- Add the panko and garlic.
- Cook, stirring often, for 3 to 4 minutes until the crumbs are golden and the garlic is fragrant.
- Remove from the heat and stir in the Parmesan and parsley.
- Let the topping cool.
Make the filling and assemble
- Cut the eggs in half lengthwise and place the yolks in a medium bowl.
- Mash the yolks until smooth.
- Stir in the mayonnaise, Dijon, vinegar, garlic powder, and black pepper until creamy.
- Spoon the filling into the egg-white halves and refrigerate for at least 20 minutes.
- Sprinkle with the cooled topping just before serving.
Notes
For the crispest topping, sprinkle it on just before serving. Refrigerate leftovers for up to 2 days; freezing is not recommended. For a gluten-free option, use gluten-free panko.
