Ingredients

  • 1.5 lb ground beef 85% lean
  • 1 yellow onion medium, diced
  • 2 celery ribs diced
  • 2 carrots medium, peeled and sliced
  • 2 cloves garlic minced
  • 2 tbsp all-purpose flour
  • 1 tsp kosher salt
  • 0.5 tsp black pepper
  • 4 cups beef broth
  • 1 can (14.5 oz) diced tomatoes
  • 1.5 lb Yukon Gold potatoes cut into 1-inch pieces
  • 1 tbsp Worcestershire sauce
  • 1 tsp dried thyme
  • 1 bay leaf
  • 1 cup frozen peas

Equipment

  • 1 6-quart Dutch oven

Method

  1. In a 6-quart Dutch oven over medium-high heat, cook the ground beef for 7 to 9 minutes, breaking it into small pieces, until browned and it reaches 160°F; drain excess fat.
  2. Add the onion, celery, and carrots and cook over medium heat for 5 to 6 minutes, stirring occasionally, until the onion softens; stir in the garlic and cook for 30 seconds.
  3. Sprinkle the flour over the beef and vegetables and stir for 1 minute, then stir in the salt and pepper.
  4. Gradually stir in the beef broth, then add the diced tomatoes, potatoes, Worcestershire sauce, thyme, and bay leaf; bring to a boil over medium-high heat.
  5. Reduce the heat to maintain a gentle simmer, cover, and cook for 25 to 30 minutes, stirring occasionally, until the potatoes and carrots are fork-tender.
  6. Stir in the frozen peas and simmer uncovered for 3 to 5 minutes, until heated through; remove the bay leaf and let the stew rest for 5 minutes before serving.

Notes

For tender vegetables, cut the potatoes and carrots into even-sized pieces. Refrigerate leftovers for 3 to 4 days or freeze them; for a gluten-free option, use a gluten-free all-purpose flour blend.
