Ingredients

Bake the cake
  • 1.75 cup all-purpose flour
  • 2 cup granulated sugar
  • 0.75 cup cocoa powder unsweetened
  • 1.5 tsp baking powder
  • 1.5 tsp baking soda
  • 1 tsp salt
  • 2 eggs large
  • 1 cup buttermilk
  • 0.5 cup neutral oil
  • 2 tsp vanilla extract
  • 1 cup coffee hot, brewed
Make the topping
  • 1.5 cup pecans chopped
  • 1 cup semisweet chocolate chips
  • 1 cup heavy cream divided
  • 11 oz caramels soft, unwrapped

Equipment

  • 1 9x13-inch baking dish
  • 1 hand mixer

Method

Bake the cake
  1. Heat the oven to 350°F and grease and flour a 9x13-inch baking dish.
  2. Whisk the flour, sugar, cocoa powder, baking powder, baking soda, and salt in a large bowl.
  3. In a medium bowl, whisk the eggs, buttermilk, oil, and vanilla until combined.
  4. Add the egg mixture to the flour mixture and beat with a hand mixer on medium speed for 2 minutes.
  5. Stir in the hot coffee until the batter is smooth, then pour the thin batter into the prepared dish.
  6. Bake for 32 to 38 minutes, until a toothpick inserted in the center comes out with a few moist crumbs.
  7. Cool the cake completely in the dish, about 2 hours.
Make the topping
  1. Toast the pecans in a dry skillet over medium heat for 3 to 5 minutes, stirring often, until fragrant; transfer to a plate.
  2. Put the chocolate chips in a heatproof bowl and warm 1/2 cup of the heavy cream in a small saucepan until steaming; pour it over the chips, wait 2 minutes, then stir until smooth.
  3. Spread the chocolate mixture over the cooled cake and let it set for 15 minutes.
  4. Melt the caramels with the remaining 1/2 cup heavy cream in a small saucepan over low heat, stirring often, until smooth, about 5 to 8 minutes; stir in the toasted pecans and spoon the mixture over the cake.
  5. Let the cake stand for 20 minutes before slicing.

Notes

For neat slices, let the cake cool completely before adding the topping. Store covered in the refrigerator for up to 5 days; freeze individual slices for up to 2 months. A 1:1 gluten-free baking flour can replace the all-purpose flour.
