Bake the tots
- Preheat the oven to 425°F.
- Spread the tater tots in a single layer on a 13x18-inch rimmed baking sheet.
- Bake for 25 to 30 minutes, turning the tots halfway through, until golden brown and crisp.
Prepare the toppings
- While the tots bake, cook the bacon in a 10-inch skillet over medium heat for 8 to 10 minutes, turning as needed, until crisp.
- Drain the bacon on paper towels.
- Crumble the bacon.
Assemble and serve
- Sprinkle the hot tots with the cheddar and crumbled bacon, then return the pan to the oven for 3 to 5 minutes, until the cheese is melted.
- Serve hot with dollops of sour cream and the sliced scallions.
Notes
For the crispiest tots, spread them in a single layer without crowding the baking sheet. Refrigerate leftovers for up to 3 days; freezing is not recommended after assembly. For a lighter topping, use plain Greek yogurt in place of sour cream.
