Ingredients

  • 1 cup maraschino cherries measured after draining, chopped, and patted dry
  • 2.25 cups all-purpose flour
  • 1 tsp baking soda
  • 0.5 tsp salt
  • 0.75 cup unsalted butter softened
  • 0.75 cup light brown sugar packed
  • 0.5 cup granulated sugar
  • 1 egg large
  • 1 tsp vanilla extract
  • 1 cup semisweet chocolate chips

Equipment

  • 2 baking sheets

Method

  1. Heat the oven to 350°F.
  2. Line two baking sheets with parchment paper.
  3. Drain the cherries, chop them, and blot thoroughly with paper towels; measure 1 cup after preparing them.
  4. Whisk the flour, baking soda, and salt together in a medium bowl.
  5. Beat the butter, brown sugar, and granulated sugar in a large bowl until creamy, about 2 minutes.
  6. Beat in the egg and vanilla until combined.
  7. Add the flour mixture and mix just until no dry streaks remain.
  8. Fold in the chocolate chips and cherries.
  9. Chill the dough for 30 minutes.
  10. Scoop rounded tablespoons onto the prepared baking sheets, spacing them about 2 inches apart.
  11. Bake for 10–12 minutes, rotating the sheets halfway through, until the edges are lightly golden and the centers still look slightly soft.
  12. Cool the cookies on the baking sheets for 5 minutes.
  13. Transfer the cookies to a wire rack to cool completely.

Notes

Pat the cherries thoroughly dry so excess moisture does not affect the dough. Store cookies in an airtight container at room temperature for up to 4 days or freeze them for up to 3 months. For a dairy-free version, use plant-based butter and dairy-free chocolate chips.
