Ingredients

Caramel-peanut centers
  • 1 package (11 oz) soft caramels unwrapped
  • 2 tbsp heavy cream
  • 2 cups salted dry-roasted peanuts
White chocolate coating
  • 12 oz white chocolate chopped

Equipment

  • 1 large rimmed baking sheet
  • 1 microwave

Method

Make the centers
  1. Line a large rimmed baking sheet with parchment paper.
  2. Heat the soft caramels and heavy cream in a medium saucepan over low heat, stirring often, until smooth.
  3. Remove the pan from the heat and stir in the salted dry-roasted peanuts until evenly coated.
  4. Drop rounded tablespoonfuls of the mixture onto the prepared baking sheet, making 18 clusters.
  5. Refrigerate for 25 to 30 minutes until firm.
Coat the candies
  1. Put the chopped white chocolate in a microwave-safe bowl and microwave at 50% power in 20-second intervals, stirring each time, until smooth.
  2. Dip each chilled cluster in the melted white chocolate, letting excess drip back into the bowl, then return it to the baking sheet.
  3. Refrigerate for 15 to 20 minutes until the coating is set.

Notes

For neat clusters, let excess white chocolate drip back into the bowl before returning each candy to the baking sheet. Store in an airtight container in the refrigerator for up to 2 weeks; freeze for up to 2 months. For a dairy-free variation, use dairy-free caramels, cream, and white chocolate.
