Ingredients

For the sweet potatoes
  • 1 lb sweet potatoes peeled and cut into 1/2-inch cubes
  • 1 tbsp olive oil
  • 0.5 tsp kosher salt
  • 0.25 tsp smoked paprika
  • 0.125 tsp black pepper
For the bowls
  • 1 can (15 oz) black beans drained and rinsed
  • 2 tbsp water
  • 1 tsp unsalted butter
  • 4 eggs large
  • 1 avocado medium, sliced
  • 0.5 cup salsa
  • 2 tbsp cilantro chopped fresh

Equipment

  • 1 18x13-inch rimmed baking sheet
  • 1 12-inch nonstick skillet

Method

Roast the sweet potatoes
  1. Heat the oven to 425°F and line a rimmed 18x13-inch baking sheet with parchment paper.
  2. Toss the sweet potatoes with the olive oil, salt, smoked paprika, and black pepper on the baking sheet, then spread them in a single layer. Roast for 25 to 30 minutes, turning once, until tender and browned at the edges.
Cook the beans and eggs
  1. Combine the black beans and water in a small saucepan over medium-low heat and cook, stirring occasionally, for 3 to 5 minutes, until hot.
  2. Melt the butter in a 12-inch nonstick skillet over medium-low heat. Add the eggs and scramble, stirring often, until fully set and they reach 160°F.
Assemble the bowls
  1. Divide the sweet potatoes, beans, and eggs between two bowls. Top with the avocado, salsa, and cilantro.

Notes

For even browning, spread the sweet potatoes in a single layer and turn them once while roasting. Refrigerate the cooked potatoes, beans, and eggs separately for up to 4 days; the roasted potatoes and beans can be frozen, but the eggs and avocado are best kept fresh. For a dairy-free swap, use olive oil instead of the butter.
