For the Crispy Chicken:

  • 3 chicken breasts (approx. 525g/1.1lbs), chopped into bite-size chunks
  • 3 tbsp cornflour (cornstarch in the USA)
  • 120 ml (½ cup) buttermilk
  • 1 egg
  • ¾ tsp garlic salt
  • ¼ tsp white pepper
  • 1 tsp salt
  • 150 g (3 cups) panko breadcrumbs
  • 1 tsp paprika
  • ½ tsp black pepper
  • ½ tsp celery salt
  • 2 tbsp olive oil

Bang Bang Sauce:

  • 120 ml (½ cup) mayonnaise
  • 2 tbsp sweet chilli sauce
  • 1 tbsp sriracha chilli sauce
  • 1 tsp honey

To Garnish:

  • 4 spring onions (scallions), sliced
  • 1 red chilli, thinly sliced

How to Make Bang Bang Chicken:

1. Oven Preparation:

  • Start by preheating your oven to 200C/400F. This ensures it’s at the right temperature when you’re ready to bake.

2. Bang Bang Sauce Creation:

  • In a small mixing bowl, combine the mayonnaise, sweet chilli sauce, sriracha, and honey.
  • Stir well until all ingredients are blended smoothly.
  • Set this sauce aside for later; it’ll be the finishing touch to your dish.

3. Setting Up the Dredging Stations:

  • Bowl 1: Pour the cornflour.
  • Bowl 2: Whisk together the buttermilk, egg, ¼ tsp garlic salt, ¼ tsp white pepper, and ½ tsp salt until well combined.
  • Bowl 3: Mix the panko breadcrumbs with paprika, the remaining salt, black pepper, garlic salt, celery salt, white pepper, and olive oil. Ensure the breadcrumbs are evenly coated with the oil and spices.

4. Coating the Chicken:

  • Start with a piece of chicken and first dredge it in the cornflour, ensuring it’s lightly coated.
  • Dip this piece into the buttermilk mixture, letting any excess drip off.
  • Finally, roll the chicken in the panko mixture, pressing gently so the breadcrumbs adhere well.
  • Place the coated chicken piece on a baking tray and repeat with the remaining chicken.

5. Baking & Serving:

  • Once all chicken pieces are coated and on the tray, place the tray in the preheated oven.
  • Let them bake for about 20 minutes. The chicken should turn a golden brown and be cooked through, with no pink in the center.
  • Transfer the baked crispy chicken to a serving dish.
