Savor the blend of vanilla and chocolate in these Marble Muffins. Quick to make, these moist and fluffy treats are perfect for satisfying your sweet tooth.

Ingredients List:

Muffin Batter:

  • 260 g All-purpose wheat flour (1 ¾ Cup + 2 Tbsp.)
  • 1 ½ Tsp. Baking powder
  • ½ Tsp. Salt
  • ½ Tsp. Bicarbonate of soda
  • 3 medium eggs, room temperature
  • 1 Tsp. Vanilla extract
  • 200 g Sugar (1 Cup)
  • 280 ml Buttermilk or yogurt, chilled (1 Cup + 2 Tbsp.)
  • 140 ml Sunflower or corn oil (⅔ Cup)

Chocolate Flavor:

  • 20 g Unsweetened Cocoa powder (2 ½ Tbsp.)

How to Make Marble Muffins:

1. Preheat and Prepare

  • Preheat your oven to 210°C / 410°F.
  • Line a 12-cup muffin pan with paper liners or grease it with non-stick cooking spray.

2. Mix Dry Ingredients

  • In a large mixing bowl, sift together the all-purpose wheat flour, baking powder, salt, and bicarbonate of soda.
  • Give it a brief stir to ensure the ingredients are evenly distributed.

3. Prepare Wet Ingredients

  • In a separate bowl, whisk together the room temperature eggs, sugar, vanilla extract, chilled buttermilk (or yogurt), and oil.
  • Ensure all the ingredients are well integrated and the mixture is smooth.

4. Combine the Mixtures

  • Gradually add the wet ingredients to the bowl containing the dry ingredients.
  • Mix gently just until everything is moistened and lump-free. Be careful not to overmix to keep the muffins fluffy.

5. Create Chocolate Batter

  • Divide the batter equally into two separate containers.
  • In one of the containers, sift in the unsweetened cocoa powder and mix until you have a smooth chocolate batter.

6. Fill the Muffin Cups

  • Spoon the vanilla and chocolate batters alternately into the prepared muffin cups, creating a marble effect.
  • Ensure each muffin cup is filled to the top for a nice muffin dome.

7. Bake and Test

  • Place the muffin pan in the preheated oven and bake for approximately 15 minutes.
  • Check the doneness by inserting a skewer into the center of a muffin; it should come out clean.

8. Cool and Serve

  • Once baked, allow the muffins to rest in the pan for 5 minutes.
  • Gently unmold them and transfer to a wire rack to cool completely.
