How to Make Bow Tie Pasta with Greens and Vegan Sausage:

  1. Cook Pasta: Bring a large pot of salted water to a boil. Add the bow tie pasta and cook according to the package instructions until al dente. Drain and set aside, reserving some pasta water.
  2. Prepare Vegetables: While the pasta is cooking, blanch the broccoli florets in boiling water for 2-3 minutes until bright green and slightly tender. Remove with a slotted spoon and set aside. Sauté the kale in the same boiling water for about 1 minute. Drain and set aside.
  3. Cook Sausage: In a large skillet over medium heat, sauté the sliced Lightlife Italian sausage with a tablespoon of olive oil until browned and cooked through. Remove from the skillet and set aside.
  4. Make the Sauce: In the same skillet, add the remaining olive oil and minced garlic. Cook on low heat until the garlic is fragrant but not browned.
  5. Combine Ingredients: Add the cooked pasta, broccoli, kale, and browned sausage to the skillet with the garlic oil. Toss everything together, heating through. If the mixture seems dry, add a little reserved pasta water to help create a light sauce that clings to the pasta.
  6. Season: Season with salt and pepper to taste. Add crushed red pepper flakes if desired for a spicy kick.
  7. Serve: Transfer to a serving dish. If using, sprinkle with grated Parmesan cheese and garnish with fresh parsley.
