Ingredients List:

  • 1/2 cup coconut sugar (or substitute with cane sugar)
  • 2 Tbsp unsweetened almond milk (or other non-dairy milk)
  • 3 Tbsp coconut oil (use refined for a less intense coconut flavor or substitute with vegan butter)
  • 2 Tbsp unsweetened cocoa powder or cacao powder
  • 1/2 cup unsweetened shredded coconut
  • 1 cup rolled oats (gluten-free for GF eaters)
  • 1/3 cup salted natural peanut butter, crunchy or creamy (or substitute with almond butter)
  • 1/2 tsp pure vanilla extract
  • 1 pinch sea salt
  • 2 Tbsp crushed salted roasted peanuts or shredded coconut (optional for topping)

How to Make No-Bake Chocolate Coconut Cookies:

1. Preparation Stage:

  • Begin by lining a baking sheet with parchment or wax paper. This will ensure your cookies don’t stick and are easy to remove once set.

2. Make the Mixture:

  • In a medium saucepan, combine the coconut sugar, almond milk, cocoa powder, and coconut oil.
  • Place the saucepan over medium heat and stir the ingredients frequently.
  • Once the mixture starts bubbling, allow it to boil for precisely 1 minute.

3. Add the Remaining Ingredients:

  • After removing the saucepan from the heat, swiftly add the peanut butter, oats, shredded coconut, vanilla, and salt.
  • Stir the mixture thoroughly, ensuring all ingredients meld together and are fully incorporated.

4. Shape The Coconut Cookies:

  • Using a tablespoon, scoop out heaping amounts of the batter and drop them onto the prepared baking sheet. Aim for uniform sizes for even setting.
  • For an added touch, sprinkle the cookies with crushed peanuts and/or additional flaked coconut, if desired.

5. Setting the Cookies:

  • Allow the cookies to sit undisturbed at room temperature. They will need about 25-30 minutes to cool and harden.
  • Once set, they’re ready to be enjoyed!
  • If you have any leftover cookies, store them in a covered container. They can be kept at room temperature or refrigerated for up to 3 days. However, they taste best when fresh.
