Spinach and Feta Casserole is a comforting and nutritious dish that combines creamy cottage cheese, tangy feta, and wholesome spinach. This simple, gluten-free, and low-carb recipe is perfect for any meal.

Ingredients:

  • 3 large eggs, beaten
  • 2 cups cottage cheese
  • 10 ounces frozen chopped spinach, thawed and very well drained
  • 1/3 cup crumbled feta
  • 1/3 cup diced sweet onion
  • 1/4 cup melted butter
  • 2 tablespoons freshly grated Parmesan
  • 1/8 teaspoon black pepper
  • 1/8 teaspoon garlic powder
  • A dash of nutmeg

How to Make Spinach and Feta Casserole:

1. Preparing the Oven and Casserole Dish

  • Start by preheating your oven to 350 degrees F (175 degrees C).
  • Grease a 1 1/2-quart casserole dish evenly to ensure easy removal of the casserole once baked.

2. Preparing the Ingredients

  • Thoroughly thaw the frozen chopped spinach and squeeze out as much liquid as possible. This step is crucial to prevent the casserole from becoming watery.
  • Dice the sweet onion finely to ensure it blends well with the other ingredients.
  • Melt the butter and set it aside to cool slightly.

3. Mixing the Ingredients

  • In a large mixing bowl, combine the beaten eggs, cottage cheese, well-drained spinach, crumbled feta, diced sweet onion, melted butter, freshly grated Parmesan, black pepper, garlic powder, and a dash of nutmeg.
  • Mix the ingredients thoroughly to ensure an even distribution of flavors.

4. Baking the Casserole

  • Carefully transfer the mixture to the greased casserole dish, spreading it evenly.
  • Place the dish in the preheated oven and bake, uncovered, for about 40-45 minutes. The casserole is ready when the center is nearly set and the edges are slightly golden.
  • Once baked, remove the casserole from the oven and allow it to cool for 5-10 minutes. This rest period helps the casserole to set properly.
