Honey Baked Ham

Honey baked ham is warmed slowly in a foil-covered roasting pan, then brushed with a honey-brown sugar glaze and broiled until its sugar crust bubbles and caramelizes. The spiral slices soak up the glaze for a glossy, sweet finish.

  • 1 cup water
For the honey glaze and crust
  • 0.5 cup honey
  • 0.5 cup light brown sugar packed
  • 2 tbsp unsalted butter
  • 1 tbsp Dijon mustard
  • 0.5 tsp ground cinnamon
  • 0.125 tsp ground cloves
  • 0.25 cup granulated sugar

Equipment

  • 1 16x12-inch roasting pan

Method

Make the ham
  1. Heat the oven to 300°F.
  2. Set the ham cut-side down in a 16x12-inch roasting pan.
  3. Pour the water around the ham.
  4. Cover the pan tightly with foil and bake for 1 1/2 to 2 1/2 hours, until the thickest part away from the bone reaches 140°F.
Make the honey glaze and crust
  1. While the ham bakes, combine the honey, brown sugar, butter, Dijon mustard, cinnamon, and cloves in a small saucepan.
  2. Bring the mixture to a simmer over medium heat, stirring until smooth, then simmer for 2 minutes.
  3. Remove the ham from the oven and discard the foil.
  4. Brush the glaze over the ham and between the slices.
  5. Sprinkle the granulated sugar evenly over the top.
  6. Set the oven to broil and broil the ham 4 to 6 inches from the heat for 1 to 3 minutes, watching constantly, until the sugar bubbles and caramelizes.
  7. Rest the ham for 10 minutes before serving.

Notes

For the most even finish, brush glaze between the spiral slices and watch constantly while broiling. Refrigerate leftovers for 3 to 4 days or freeze them for up to 2 months. For a dairy-free adaptation, use dairy-free butter.
